This is not your grandma’s gingerbread cookie! Years ago, I was on the hunt for the perfect gingerbread cookie. I had a long list of requirements: must be soft, must have a slight chewiness, mild in molasses and ginger flavor. Man oh man, after what seemed like a bazillion flops we finally found one that was just right! Fast forward to a few months ago I set out on a mission to bring that recipe into the rollout cookie dough world! And so was born... Gingy! This is a soft and easy-on-the-palate, white chocolate gingerbread roll out cookie with a hidden secret ingredient - orange juice! It helps to mellow out and compliment the smokey flavors of the molasses and cloves. This will for sure become a staple in your holiday cookie recipe book!
